Pecan, Cinnamon and Honey Granola

 

INGREDIENTS

 

  • 250g oats,

  • 180g pecans,

  • 100g almonds,

  • 180g pumpkin seeds, 

  • 180g sunflower seeds,

  • 3 teaspoon ground cinnamon

  • 3 tablespoons coconut oil

  • 1 tablespoons maple syrup

  • 2 tablespoons of Honey 

Preheat oven to 180c, fan setting.

Method

  1. Place the pecans and almonds in a food processor.  Pulse these until they are partially crushed (30 seconds or so). Add them to a large baking tray with the oats, pumpkin seeds and sunflower seeds, and mix well.

  2. Melt the coconut oil, cinnamon,  maple syrup and honey over a medium heat. When this has dissolved add it to your mixture and stir well

  3. Place in the oven and cook for 35-40 minutes. It is essential that you check every 10 minutes (5 towards the end) to make sure nothing burns or catches. When beautifully browned (see pic) remove from the oven to cool.

  4. This will keep in an airtight container for around a month, unless your children are back from uni, then you'll be lucky to see any of it!
